My guest today on "Digging in the Dirt" is all about the beef….Grass fed beef. Although I suspect that Simon is also all about the Kale. Simon Martinez, along with his partner Robert, raises Red Poll cows, Berkshire pigs and chickens on their farm, Flaca Vaca Farm (Skinny Cow) in upstate NY, and they do it in a very thoughtful, nutritionally sensitive, humane manner.
